Hi everyone! I'm trying to find out how sushi places marinate their shiitake mushrooms. everywhere I go tastes the same and it's so delicious. There's many recipes that come up with a search, but trial and error would cost a lot. if anyone could help me narrow it down I would really appreciate it!
