Hi y'all! Here I am today with another recipe: Croquettes. They are a meal originating in baroque France, when a royal cook for relatives to Louis XIV (The sun king) first wrote it down.
Today, it has many varieties, one of which is Polish, with crepes, breadcrumbs and white mushroom filling. Here is a simple recipe how to make it on your own. Nowadays most people buy them, but there is a sky high difference between the self made ones. Enjoy!
INGREDIENTS
Crepe
1.5 glass of milk
1 glass of flour
1 egg
1 pinch of salt
1 tbsp veg. oil
Filling
100g cheese
300g white mushrooms
1 onion
salt
earthy herbs
Croquette
~600g filling
4 crepes
1 egg
~100g breadcrumbs
PREPARATION
1) Prepare crepe: combine the ingredients to make a dough. Fry on a pan on high or medium heat on both sides for 1-2 minutes.
2) Prepare filling
a) Dice the onion
b) Grate the mushrooms and cheese
c) Fry the onion and mushrooms on a pan
d) combine everything once mushrooms cool down.
3) Roll them: Spread the filling on each crepe. Connect the side edges of a crepe and roll the crepe from bottom to top containing the filling and side edges inside (just like Gołąbki)
4) Cover pancake rolls with beaten egg and with breadcrumbs
5) Fry them on medium-high heat for 1-2 minutes on each side.
Serve them with hot cup of clear soup. Preferably barszcz. In case you'd like to make something out of beetroots from barszcz, head onto beetroot salad video.
