1 green zucchini

1 yellow zucchini

1 eggplant

3 small tomatoes

100g mozzarella cheese

300g tomato sauce

4 sprigs thyme

olive oil

black pepper
Let's get Cooking...

Cut vegetables and cheese into 4mm thick slices.

Pour tomato sauce into a square pan. Lay mozzarella slices on top.

Arrange the eggplant, zucchini and tomato slices on top.

Drizzle a liberal amount of olive oil on top and season with black pepper. Lay thyme on top and bake for 30 minutes at 180 degrees C.
