Summer Vegetables Ratatouille

Ingredients

  • 1 green zucchini

  • 1 yellow zucchini

  • 1 eggplant

  • 3 small tomatoes

  • 100g mozzarella cheese

  • 300g tomato sauce

  • 4 sprigs thyme

  • olive oil

  • black pepper

Let's get Cooking...

  • Cut vegetables and cheese into 4mm thick slices.

  • Pour tomato sauce into a square pan. Lay mozzarella slices on top.

  • Arrange the eggplant, zucchini and tomato slices on top.

  • Drizzle a liberal amount of olive oil on top and season with black pepper. Lay thyme on top and bake for 30 minutes at 180 degrees C.
