So after a very successful first Halibut fishing trip, I have a pleasant problem. My freezer is jam packed with 110lbs of Halibut portioned into 2lb packages.
I would love some help gathering some recipes to keep things interesting over the next year+ of cooking halibut. Preferably tested recipes that won't end up with me wasting this amazing fish. I am extremely open to different flavor profiles, and while easy to make weekday dinner recipes are appreciated, I'd love more complicated dishes that take more time and attention as well. I do have sous vide available in addition to a gas stove and Big Green Egg.
So far I've tried a couple recipes substituting Halibut for black cod (I could use more info on what halibut will substitute for so I can find more recipes!):

I made this with a combination of sous vide @120, finished under the broiler. Subbed the miso for korean doenjang for something closer to ssamjang. The flavor came out great, but the fish was a bit dry. I'm not sure halibut has the fat to stand up to time under the broiler without a brine/marinade.

This was the second recipe I tried, and it came out great. I sectioned my filet into roughly 1/2 inch slices for marinading and cooked it entirely under the broiler. It came out flaky but still moist with an extremely satisfying umami/miso flavor from the marinade.
By the time I've cooked my way through all this halibut I should just publish my own 101 halibut recipes book! Thanks in advance for any help keeping myself sane eating all this fish.
