Black pepper salmon with spinach salad and garlic bread

Ingredients

** For Spinach Salad**

  • 2 cup baby spinach
  • 1/4 red bell pepper
  • 1/4 cup Button Mushrooms sliced
  • 1/2 small onion Cut as rounds
  • 1 medium carrot chopped
  • 1 tbsp walnuts
  • 2 tbsp Pomegranate seeds Blue berries can be used also
  • 2 tbsp feta cheese
  • 2 tbsp low cal herb dressing

For Salmon

  • 2 (4 ounce) Salmon filets
  • 1 tbsp Pepper
  • 1/2 lime

Instructions

  • Chop bell pepper, mushrooms, onion and carrots and add to a mixing bowl
  • Mix all the ingredients except the dressing. Add dressing just before serving.
  • In skillet on medium add olive oil
  • Add salmon, keeping the heat on medium
  • Squeeze lime and sprinkle black pepper on both sides of salmon
  • Cover it for 5 min
  • In the meantime, add dressing to the salad
  • Once the Salmon is ready, serve hot along with salad and a piece of garlic bread
