List of ingredients : Dough: * Flour - 3,5 cup + (1,5 cup) * Water - 1 cup * Salt - 1 tsp * Egg - 1
**Filling. Main base for both kinds:**
- Farmer cheese - 500 gm.

Egg - 1
**Salty filling: +**

Salt - 1/4 tsp
-
Fresh dill
**Sweet filling +**

Vanilla sugar - 1/2 pack
-
Sugar - 1/2 tbsp
**Additional**

Butter - little piece
-
Dill for salty dumplings

Sour cream or sugar for sweet dumplings

Sift 3,5 cups of all purpose flour into a deep bowl.

Add 1 tsp of salt + 1 cup of water and 1 egg.

Mix all with a spoon and make a dough. Massage it. You may need to add a little bit more of flour. Dough should not be sticking to your hands.

Wrap it with a plastic wrap or cover with a clean kitchen towel and let it rest for 30 minutes.

Combine all of the farmer cheese with 1 egg and mix it well. That is the main base for both kind of dumplings.

Divide this cheese into 2 equal parts.

For salty filling we add 1/4 tsp of salt and some chopped dill. Mix it all together.

For sweet dumplings. Combine cheese with 1/2 pack of vanilla sugar and 1/2 tbsp of sugar.

Get your dough again - unwrap it. Sift some flour on top of dough and massage it a bit.

Divide it into 2 halves.

Roll one part out.

Prepare a tray or some board and cover it with a little bit of flour. We will be placing dumplings on it.

With the help of glass make dough rounds. And fill them with your cheese. Make a dumpling.

When you place them on board - make sure dumplings don't tough each other.
**Cooking steps for sweet and salty dumplings**

Boil water and salt it.

Place dumplings in it one by one.

With the help of spoon carefully move dumplings to make sure they did not stick to the bottom.

When all of the dumplings are floating - take one out and try if it's ready. Usually they are.

Get all of the dumplings into the deep bowl. And place a little piece of butter on top. Mix so all dumplings would be greased with it.

Add some dill on top of salty dumplings.

Sweet dumplings you may serve with sour cream or little bit of sugar on top.
**Tips on freezing dumplings.**

If you made a lot of dumplings you may want to freeze them.
-
As you made them, with a tray place them into a freezer. Wait until they get frozen. Replace them into the food container and put them back in a freezer until you want to cook them.

Cooking process of frozen dumplings is the same as just made. You don't need to wait until they get unfrozen.
