Skinny chicken mushroom casserole, what I like here is that it is still creamy!

Rich and creamy, yet it comes unloaded from all these unnecessary calories that other recipes might have

Skinny chicken mushroom casserole

Ingredients

2-3 large boneless chicken thighs/breasts, trimmed and cut into 1 -inch thick strips. 2 Tablespoon olive oil. 1 Tablespoon butter. Salt and Pepper to taste. 1 medium onion - sliced. 2 Tablespoons flour or corn starch. 1/2 lb mushroom - thickly sliced. 1/2 - 1 cup water, depends on the desired thickness **

1/4 cup fat free - or 1% - milk. 

Instructions

In a pan over medium heat, melt butter with olive oil, toss the chicken and stir, season with some salt and pepper. easy chicken mushroom recipe Keep stirring until chicken turns white. easy chicken mushroom recipe Add onion rings and stir for 3 minutes. easy chicken mushroom recipe Add mushroom and stir. easy chicken mushroom recipe Sprinkle the flour or cornstarch, mix well until no visible flour is seen. Add water and stir, let it thicken for a minute or two then add the milk if you chose to. Let the chicken cook for another 5 minutes until you are sure it is completely done. Serve with rice or pasta. Enjoy !!

** You can use broth for extra flavors.
