Okay, here's a picture of what the following recipe looked like. It was really tasty! But It wasn't exactly appetizing to look at. Got any suggestions that wouldn't involve adding carbohydrates?
Recipe:
one acorn squash
one medium carrot, grated
1/4onion, chopped
lightly boil one small acorn squash. peel and break up. add onion and carrot. put in sauce pan with about 3/4 cup water. simmer 30 minutes with lid on. drain.
mash with 2 tablespoons butter
add about 1/4 cup feta
1 tspn cinnamon
1/2/ tspn nutmeg
beat 2 eggs, and add to squash mixture. beat well pour into loaf pan add sliced apple to top with crumbled feta
bake at 375 for about 35-40 minutes
