Chinese Smoked Tofu with Celery and Peanuts (Liang Ban Dou Fu Gan)

Recipe

  • 100g smoked or spiced firm tofu

  • 3 celery sticks

  • 30g fried peanuts

  • 11/2 tbsp chilli oil with 1/2 tbsp of sediment

  • A pinch of caster sugar and salt

Preparation

Start out by cutting your tofu into small cubes, before destringing your three celery sticks and cutting them into a similar shape. Blanch the celery by bringing some water to the boil in a frying pan and tossing in the celery for about a minute. Once done, take out the celery and drain it in a colander. The celery should be softer, but still have a little crunch.

Now its time to fry your peanuts. Put enough oil in a frying pan to cover the nuts and heat them up. Put in the peanuts and fry them under a gentle flame for 20 minutes until crisp, then remove, drain, and spread out too cool.

Combine all your ingredients together and be sure to toss well.
