Ingredients
- 2 large red onions, coarsely chopped
- 1 lb parsnips
- 1 lb carrots
- 1 1/2 lb sweet potatoes
- 3/4 cup sweetened dried cranberries
- 3 tablespoons olive oil
- 3 tablespoons balsamic vinegar
- 2 tablespoon light brown sugar
- 1 teaspoon salt
- 1/2 teaspoon freshly ground pepper
- 1/3 cup fresh parsley
Instructions
- Spray the inside of the slow cooker with cooking spray.
- Chop onions, parsnips, and carrots into 1 1/2-inch pieces and add to the slow cooker.
- Add cranberries, and stir all the vegetables together to combine.
- Cut sweet potatoes into 1 1/2-inch pieces and place them on top of the other vegetables.
- In a separate bowl, stir together the oil, balsamic vinegar, brown sugar, salt, and pepper. Pour the mixture over the vegetables.
- Cover and cook on high heat for 4-5 hours. Top with fresh parsley and serve.
