This recipe is unbelievably delicious. We put all of these ingredients together and were pretty blown away by it. What's interesting is the grits kind of form a grit-cake type consistency and hold together nicely. Very hearty, very filling, very delicious. On with the recipe!
Ingredients:
* 1/4 Cup Grits * 1 Cup Coconut Milk * Pineapple Chunks (in the little plastic container) * Cilantro * Sriracha * Salt
Sounds pretty simple, right? It is!
Add 1/4 cup grits to bowl with 1 cup coconut milk. Microwave for 7 minutes. Remove from microwave, stir well, and mix in entire container of pineapple chunks with juice [these are the little miniature snack-size pineapple containers]. Stir to combine. Add a pinch of salt on top, cilantro, and Sriracha.
