Refreshing watermelon salad

INGREDIENTS

¼ seedless watermelon (approx 3-4 lb), cut into cubes

1 brown onion, cut in half and finely sliced

3 limes, squeezed

1 cup fresh mint, shredded

INSTRUCTIONS

Put the sliced onions and the squeezed limes in a small bowl and let it soak for 10 minutes.

In a large mixing bowl, combine the watermelon and the onions.

Mix through the shredded mint and serve immediately.

NOTES

If you plan to pack this salad, pack the mint separately and mix through just before eating.
