How do you prevent egg casseroles from being too chewy?

I've been tasked with bringing a vegetarian, dairy free egg dish to Easter brunch. While at home I will make an egg casserole that's basically just eggs and veggies, it tends to be chewy - I don't mind but I don't really want to serve it to other people. How do I make it not chewy?
