Chinese Stir-Fried Lotus Roots

Full recipe on Feeding Fen

Ingredients

  • 1 section of lotus root

  • 1 tbsp cooking oil

  • 2 tsp ginger

  • 2 cloves of garlic

  • 1 red chili pepper

  • 1 green chili pepper

  • 1 tsp salt

  • 2 tsp light soy sauce

  • Chicken stock

For the Coating

  • 1 tbsp potato flour

  • 1 tsp salt

  • 1 egg

Instructions

  • Cut the lotus sections into three equal sized pieces and peal each with a potato peeler. Cut into thin slices, then soak in a bowl full of water from the kettle

  • Dice the ginger and garlic, and slice the peppers into three of four pieces

  • Place the potato flour, salt and egg into a bowl and mix well. Coat each of the lotus slices

  • Heat the oil in the pan and tip in the lotus roots. Fry until the the coating has turned brown and fragrant, then remove from the pan

  • Add the garlic, ginger and chilli peppers and fry for about 2 minutes. Add back the lotus roots, as well as the salt, light sauce soy and chicken stock. Mix well, then serve!
