Full recipe on Feeding Fen
Ingredients

1 section of lotus root
-
1 tbsp cooking oil
-
2 tsp ginger
-
2 cloves of garlic
-
1 red chili pepper
-
1 green chili pepper
-
1 tsp salt
-
2 tsp light soy sauce
-
Chicken stock
For the Coating
-
1 tbsp potato flour
-
1 tsp salt
-
1 egg
Instructions

Cut the lotus sections into three equal sized pieces and peal each with a potato peeler. Cut into thin slices, then soak in a bowl full of water from the kettle

Dice the ginger and garlic, and slice the peppers into three of four pieces

Place the potato flour, salt and egg into a bowl and mix well. Coat each of the lotus slices

Heat the oil in the pan and tip in the lotus roots. Fry until the the coating has turned brown and fragrant, then remove from the pan

Add the garlic, ginger and chilli peppers and fry for about 2 minutes. Add back the lotus roots, as well as the salt, light sauce soy and chicken stock. Mix well, then serve!
