Ingredients
1/2 cup unsalted butter (cubbed and in room temperature) 1/2 cup brown sugar 1/2 cup white sugar 1 egg 1 teaspoon vanilla extract 3/4 cup raisins 1 cup all-purpose flour 1/4 teaspoon baking soda 1/2 cup rolled oats 1/4 teaspoon cinnamon powder
Procedure

In a bowl, combine butter and sugars. Beat using a handheld electric mixer until well combined, about three (3) to five (5) minutes.

Add egg and vanilla extract; mix.

In a separate bowl, mix together flour, rolled oats, baking soda and cinnamon powder. Gradually add to butter mixture and mix.

Add raisins and mix. Cover bowl with cling wrap and chill for at least one (1) hour inside the ref.

Prehear oven to 180c / 350f. Line baking sheet with parchment paper.

Scoop out the dough by using a 1/8 cup and roll into a ball. Arrange on the baking sheet, spacing them two (2) inches apart.

Bake in the preheated oven for 10 to 12 minutes or until golden brown but still soft in the center. Let it cool completely on the cooling rack.
