Easy one pan chicken fajitas to feed a crowd in a hurry

Sheet Pan Chicken Fajitas – one of the easiest healthy dinner recipes. Yellow, red and green peppers, sliced onions and chicken breasts, mixed with some simple spices (ground cumin, chili powder, garlic powder, salt and olive oil).   • YIELD: 8 servings

  • COOK TIME: 20 minutes

    INGREDIENTS

  • 8 flour tortillas taco size 8-9 inch

  • 1 1/2 lbs chicken breasts skinless, boneless

  • 3 bell peppers red, yellow, green

  • 1 medium onion

  • 1 tsp cumin powder

  • 1 tsp garlic powder or minced garlic

  • 2 tsp paprika

  • salt and pepper to taste

  • 1 tbsp vegetable oil

  • Garnishes for serving (optional)

  • 6 lime wedges

  • 1 tbsp fresh cilantro chopped sour cream

    INSTRUCTIONS

1- Preheat oven to 400F degrees. Set aside a large baking sheet. 2- Cut chicken breasts into 1/2" x 2" strips using a sharp knife, and set aside. Then cut onions and peppers into similar sized pieces. 3 - Place peppers, onions and chicken onto the baking sheet. Sprinkle on cumin, garlic, paprika, salt and pepper. Drizzle with oil and top all ingredients to coat evenly. 4 - Bake for 15 minutes. Remove from oven, and push the ingredients aside to make about 6-inches of space for the tortillas. Return to bake for 5 more minutes. 5- Remove from oven and squeeze optional fresh lime on top. Add chicken mixture to hot tortillas garnish with cilantro and sour cream. Serve and enjoy!
