(Question) what are some good ideas for when you need to up your vegetable in take? I get bored of food very easily and want to try something completely new.

I've gotten to a point where eating vegetables is insanely boring and it means I neglect it a bit. What are some new/out of the ordinary foods/recipes I can try to get myself back into them again?

Time and skill aren't an issue. I just want to try something new.
