Baked Avocado Eggs

I tried these last weekend and LOVED them! I did they to scoop out some avocado like they mentioned but I just added it back on top after.

Ingredients: 2 Avocados, cut in half, pitted (keep the skin on to act as part of the “serving dish”) 4 Eggs Salt and pepper to taste 8 slices of fresh jalapeno (optional) 1 tsp parmesan cheese

Directions: Place the avocado halves into a ramekin and place on a sheet pan. You can also use the cups of a muffin pan if you don’t have ramekins. Crack an egg into each of the avocado halves and sprinkle with salt and pepper, to taste. Add 2 slices of fresh jalapeno to the op and place in a 425 degree oven for 15 minutes. Dust with a little parmesan cheese and serve immediately.
