So my SO had never had margaritas before (I know, I know, but he grew up in Nebraska so I give him some leeway), and on a whim asked if we could pick up some strawberry margarita mix as well as the classic I was reaching for. Sure, why not? Well, turns out the strawberry mix is just heavy strawberry syrup and doesn't actually mix with tequila. So we've had it for a couple weeks and I finally decided to try something with it.
Ingredients:
- Strawberry margarita mix
- Boneless chicken (I used breast, but whatever you have should work fine. Actually, pork would probably work too. Or tofu. Whatever, I'm not your boss.)
- Rice (I used white, but brown would probably be tastier)
- Pan lube (spray stuff, olive oil or butter)
Directions:
- Cook rice; Rice cooker or pot- doesn't matter.
- Cube chicken into bite-sized chunks (about 1" or smaller)
- Lube pan using your preferred method
- Cook chicken on low-medium heat until golden and not salmonella-y
- Pour in mix; Enough to barely cover the chicken, and reduce heat to simmer
- Let mix reduce for about 10 minutes, occasionally stirring to check consistency, until it only comes halfway up the chicken which should now be colored by the mix
- Serve chicken on bed of rice, drizzling sauce on liberally
The proportions will be up to you and how much you want to make. I made two servings with 1 cup rice/2 cups water in my rice cooker (so 2 cups rice once cooked) and one boneless chicken breast, but maybe you want more rice, or more protein. You do you and don't let people tell you how to live your life.
Meal pairs well with shots of tequila.
