[Question] What cocoa powder do you use?

I want to make my own hot chocolate, to step up from Nestle's or Swiss' hot chocolate that I usually get from Costco.

I will use Alton Brown's recipe.

  • 2 cups confectioners' sugar
  • 1 cup unsweetened cocoa powder, preferably Dutch process
  • 2 1/2 cups nonfat dry milk powder
  • 1 teaspoon fine-grain salt
  • 2 teaspoons cornstarch
  • 1 pinch (or more to taste) ground cayenne pepper*, optional

So far I'm looking at Rodelle Gourmet Baking Cocoa and Ghirardelli Chocolate Unsweetened Cocoa Pouch.

I don't think Hershey's has good cocoa powder and there are many cocoa powder products on Amazon that are organic and 5 stars in reviews with many reviews stating "Product received for review purposes, my opinions are honest and truthful."
