Super easy to make and despite the potatoes and sweet onions and cheese it feels super summery (to me anyway)!

What you'll need:
One medium sized sweet potato Four red onions Maple syrup A pre made sheet of puff pastry Ricotta Dried Garlic Dried thyme Salt Pepper Oil
Method: Roast a diced medium sized sweet potato for 10 - 15 minutes at 200C and then set aside.
Over a medium heat, fry four sliced red onions for about 20 minutes. Add about a tablespoon of maple syrup and fry for a further 5 minutes.
Score a line about 2cm away from the outside of the puff pastry all the way around and cover the surface inside the line with the fried onions.
Top with the roasted sweet potato and dollops of ricotta. Sprinkle with salt, pepper, dried garlic and dried thyme (or fresh of both of these…I just forgot to buy the fresh versions) and bake for 20 - 25 mins at 200C until risen and browned.
