Chives can make anything taste good, even dried tofu! This is a popular home-style dish that you won't find in Americanized Chinese restaurants. My version includes eggs and chicken make this a hearty dish that goes great with rice.
Ingredients (2-3 servings):
- 200g chives (aka chinese chives, garlic chives)
- 220g five spice dried tofu (1 pack)
- 100g chicken breast, cut into thin strips
- 2 eggs
- 1 pinch salt
- 1-2 tbsp soy sauce
chicken seasoning:
- 1 tsp cooking wine (shaoxing, sake)
- 1 tsp dark soy sauce (laochou)
- 1 clove garlic, minced
- 1 dash white pepper
- 1 tsp corn starch
- 1/2 tsp sesame oil
Steps:
- Cut chives into 2 in long pieces.
- Cut dried tofu thinly.
- Mix chicken strips with seasoning.
- Crack and beat eggs.
- On high heat, fry and scramble eggs. Take out when almost done.
- Stir fry chicken strips. Take out when done.
- Stir fry dried tofu.
- Season with a pinch of salt.
- Add eggs back and stir together.
- Add soy sauce and stir.
- Add chives and chicken.
- Stir fry until chives. It's done when the chives start to wilt slightly.
Enjoy with hot steamed rice! For a spicy version, try adding doubanjiang (spicy bean paste)!
