Chinese Lotus Root Salad Recipe

Ingredients

  • 1 tbsp dried shrimps

  • 2-3 wood ear mushrooms

  • 200g lotus root (about one section)

  • 1 tsp finely chopped ginger

  • 2½ tsp clear rice vinegar

  • 1 tsp caster suger

  • A few slices of red chilli or pepper

  • 1 spring onion - green part only

  • 1 tsp sesame oil

  • Salt, to taste

Instructions

  • Boil water in the kettle and soak the dried shrimps and wood ear mushrooms (separately) for 30 minutes

  • Boil a pan of water. Slice the lotus root into three pieces, then peel using a potato peeler, then cut slice into thin pieces

  • Toss into the pan and blanch for 1-2 minutes. Drain ad refresh under cold water

  • Drain the wood ear mushrooms and shrimps. Tear the wood ear mushrooms into small pieces, and cut the chillies and spring onion greens into diagonal pieces

  • Mix all the ingredients together than serve
