Balsamic Caprese Chicken

When you are looking for a simple chicken dish that is full of flavour, then look no further. The chicken thighs are first cooked then simmered in a sauce of onion, garlic, balsamic vinegar, mustard and honey. Topped with a slice of mozzarella which is melted over the top. Finished with juicy cherry tomatoes and basil leaves and you have amazing dish bursting with flavour. The mustard and honey take away the tartness that you can get with vinegar. Mixed with these ingredients and the sauce really enhances the chicken to provide a wonderful juicy meal.

Ingredients:
• 2 tbsp Olive Oil
• 6 Chicken Fillets thigh fillets
• Salt to season
• Pepper to season
• 2 Cloves crushed
• 1/2 Red Onion diced
• 1/2 cup Balsamic Vinegar
• 1 tbsp Wholegrain Mustard
• 1 tbsp Honey
• 300 g Mozzarella Cheese cut into six slices
• 1 cup Cherry Tomatoes sliced in half
• Basil Leaves to garnish

Instructions:
1. Season Chicken with both salt and pepper.
2. Heat olive oil in a large frying pan over medium high heat.
3. Add olive oil and chicken to pan. Cook chicken for approx 6-7 minutes on each side until chicken is browned and cooked throughout.
4. Remove chicken from pan and set aside.
5. Add garlic and onion to pan and cook for about 1 minute until fragrant.
6. Add balsamic vinegar, mustard & honey. Stir with wooden spoon to mix completely.
7. Reduce heat to medium low and simmer for about 3-4 minutes. Stir regularly.
8. Add chicken to pan and place mozzarella slice on each chicken fillet.
9. Cover the pan and cook for a further 4 minutes or so until cheese is melted.
10. Remove pan from heat and sprinkle tomatoes and basil leaves over the chicken and serve.
