- Juice from 1 lime (save zest for garnish)

- 3 tbsp. chopped cilantro (save 1 tbsp. for garnish)
- 2 tbsp. chopped parsley
- 1 tbsp. minced garlic
- 1/2 tbsp. minced ginger
- 2 tsp. smoked paprika
- 1 tsp. ground cumin
- 1 tsp. ground coriander
- 1 tsp. kosher salt
- 1 tsp. black pepper
- 12 cherry tomatoes
- 1 lb. boneless skinless chicken breast cut into 1" cubes
- 1 yellow squash cut into 1 1/2" pieces
- 2 poblano peppers cut into 1 1/2" pieces
