Recipe

  1. Pour pure tounyu into a pot
  2. Boil and evaporate it to 50%
  3. Pour it to a cup and cool it to 41F°(5C°) in ice water
  4. Add a bittern to the cup and simmer it for 8 minutes
  5. Cool it to 41F°(5C°) in ice water
  6. Add toppings onto the tofu
