Looking for advice on proper cheese, spices, and peppers for great queso.

I'm competing in a queso cookoff soon. I'd like to make an authentic white queso, but am definitely open to using orange cheeses as well.

What are you recommendations for flavorful cheese that melt well?

Is there a must have spice that you include in your queso?

What are your favorite chiles to include based on flavor or heat level?

I'm thinking about combining a smooth mexican cheese like Oaxaca with a more tangy cheese like white Cheddar then adding something like garlic or Serranos.
