Stuffed pork loin ideas

Hi yall, I was thinking about doing a stuffed pork loin with apples and carrot.

I am planning on unrolling the loin (slicing) and doing thin sliced apples and shredded carrot but I was looking for input on spice ideas?

Maybe some cinnamon, thyme, black pepper and salt.

I plan on rolling the filling and tying the loin around it with cooking twine and grilling, so it'll be like a twinky, not a swiss cake roll. Anyone think that the filling will need to be pre or partially cooked before assembly?
