Ingredients
- 4 boneless cod fish fillets (1 inch thick)
- 1 tablespoon butter
- 7 garlic cloves, chopped
- 3 tablespoons extra virgin olive oil
- 1 cup breadcrumbs
- 1/4 cup chopped parsley
- ½ tablespoon oregano
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1 egg, beaten
Instructions
Preheat your oven to 400 F. In a saucepan heat the olive oil and the butter over low heat. Add the garlic and cook for one minute to soften. Remove the pan from the heat and add the parsley, bread crumbs, oregano, salt and pepper. Mix to moisten the crumbs and the seasonings. Dredge each cod fish fillet in the beaten egg. Then dredge each cod fish fillet into the breadcrumb mixture. Grease a roosting pan. Place the coated cod fish fillets in the roasting pan.
Place in the oven and bake for about 10 minutes, until the crust is golden brown. Use a fork to make sure the fish flakes and is done. Add some lemon wedges for serving.
