Ingredient Substitution/ Elimination Question

My girlfriend was really looking forward to making beef stroganoff for me one evening in her new slow cooker. The recipe that she was using called for cream of mushroom soup. The only issue is that I am allergic to mushrooms. (As in, stab me with an EpiPen and call EMS if I ever consume one.)

I am concerned that if we eliminate it, the dish will be way too dry. What can we replace that with? Is there a recipe that you can point us to where the mushrooms can be easily eliminated?
