My new favorite sandwich. Featuring tempeh.

This is so good. I'm not even vegetarian, yet this is the best sandwich I've had in a long time. It's pretty quick and easy to make too.

What you will need:
Olive oil
2 slices of sourdough bread
Tempeh, sliced into about 8 strips. I actually used Tofurky's smoky maple bacon tempeh strips for convenience and taste. If I were to use plain tempeh, I'd marinate it in the wet ingredients in the coating for a while.
Romaine or read leaf lettuce
Avocado, cut however you like
Miracle Whip. I swear it works really well here. This is the only ingredient keeping this from being a vegan meal.

Coating:
Maple Syrup
Soy Sauce
Dash of liquid smoke
Garlic powder and ginger powder
Corn starch
Salt

First mix up equal parts soy sauce and maple syrup in a big wide bowl. A tablespoon of each is more than enough. Add the dash of liquid smoke and ginger and garlic to taste. Place the tempeh strips into the mixture and flip to make sure they are all covered. In another bowl, add cornmeal (a few tablespoons) and a dash of salt. Drag the tempeh strips through the dry mix until nicely coated. Put aside for now.

Get some olive oil in a pan at medium heat. Toast one side of the sourdough bread slices until golden brown. You could toast both sides, but I like having both soft and crispy. Add some more olive oil, turn the heat up a notch, and add the tempeh slices. Cook for 2-3 minutes until golden brown, and flip until the other side is browned. You do not want to overcook these. You want the outside crispy but the inside soft. Once cooked, place the strips on a paper towel.

Add the miracle whip to the toasted side of a piece of bread. Then add lettuce, tempeh, avocado, and the other slice of bread. You could add tomato to make it a BLT of sorts, but I personally do not like tomato. I hope someone else can enjoy this sandwich!
