A Great Little Grill Recipe -- Lamb with Mint-Garlic Marinade

This leg of lamb with mint-garlic marinade will hit every thing you want from a grill and without giant beef steaks. It's got a winner of flavor.

Ingredients

  • 1/2 cup mint, stems removed

  • 1 Tbsp. oil (peanut or canola)

  • 1 Tbsp. honey

  • 2 tsp. vinegar

  • 4 cloves of garlic, coarsely chopped

  • About 16 oz. of leg of lamb

Directions

Mix together the mint, oil, honey, vinegar and garlic in a food processor or blender and grind away until the marinade is smooth.

Place a lamb in a shallow baking dish and cover both sides as heavily as you can with the marinade.

When the marinade is done (minimum two hours and overnight is better), grill for about four to five minutes per side and check until your temp meets your requirement (I tend to like mine rare to medium, because the lamb can get tough in a hurry.)

Serve immediately.
