A Real Thousand Island Dressing

Yeah, you can make this. Yep. Your own thousand island dressing. And, by the way, it's so much better than what you're already using.

Ingredients

  • 1/2 cup mayonnaise

  • 2 Tbsp. ketchup

  • 2 Tbsp. sweet pickle relish

  • 1 tsp. white vinegar

  • 2 tsp. finely diced shallot

  • 1 garlic clove, finely minced

  • 1/8 sea salt (plus more to taste)

  • 1 dash Sriracha (or other hot sauce)

Directions

The first step is to combine all the ingredients above and mix them well, tasting and adding a little more of whatever ingredients will make it better. That last step is really important, because even with only a few ingredients, taste can vary.

Now here are the special ingredients:

Mayonnaise: Mayonnaise is a combination of egg (use pasteurized), oil (I use ordinary olive oil) and just a little salt. The trick is to combine the oil with the egg in a very thin stream so that as you whip it, it gets stiff and eventually turns into a sauce you can use. For mine, I like just a little less oil than what you might want for a ready made sauce, but use your own judgement.

Ketchup: Ketchup of course starts with tomatoes, and generally includes a little vinegar, some sweetener. The add mace, nutmegs, allspice, cloves, cinnamon, ginger, and pepper.

Sweet Pickle Relish: This involves some fresh cucumbers, onions and a whole host of other ingredients, but Ill just point you to this one (http://ift.tt/1S9dyjV), which I've used and works very well.
