Baked Shrimp and Green Noodles

This recipe came from a need to make a casserole on short notice, but the baked shrimp turned out so good we may have to find a place for it more often.

Recipe:

Ingredients

  • 1 package spinach noodles (fettucine works nice)

  • 2 lbs. shrimp, peeled and deveined

  • 4 tablespoons butter

  • 1 cup sour cream

  • 1 cup mayonnaise

  • 10 oz. Alfredo sauce (home made or bought)

  • 4 Tbsp. dry sherry

  • 1-2 Tbsp. chives

  • 1 tsp. Dijon mustard

  • 1 cup (or maybe a little more) grated Parmesan cheese

Directions

Preheat the oven to 350F.

Cook the noodles until their about half done, drain and place in a buttered baking sheet.

Cook the shrimp in the butter until they are just tender. Add those (and the butter) to the noodles in the baking dish.

In a large bowl, combine all the remain ingredients (except for the cheese) and mix thoroughly. Pour that over the baking dish and using a fork, mix it well.

Finally, pour the cheese over the top and pop in into the oven for 30 minutes.
