Cauliflower Fried Rice: low carb alternative to Vegetable Fried Rice!

Ingredients

  • Carrots
  • Corn
  • Green Pepper
  • Red Pepper
  • Onions
  • Extra firm tofu
  • Sweet peas
  • Bean Sprouts
  • Green Beans
  • Soy sauce
  • Sriracha
  • Riced cauliflower

Directions:

  • Dice the veggies

  • Add a tablespoon of olive oil. First, sautée the onions, bean sprouts & green breans and wait a couple of minutes. Then add the carrots, peas, corn, and peppers. At the same time, I used a separate pan and cooked the tofu until golden brown. Add to the mix.

  • Add 1-2 tablespoons of soy sauce.

  • Add Sriracha depending of personal spice preference.

  • Add fried egg (optional)
