Oven-Crisped Chicken with Maple and Vinegar Sauce

Assuming you've suddenly found yourself with a bunch of oven-crisped chicken. So how do you make that rascal sing? Here is a great idea for that.

Ingredients

  • 3-4 pound chicken, in parts or in a single piece, flattened

  • 2 Tsp. butter

  • 1/4 cup chopped shallots

  • 1/2 tsp. black pepper

  • 1/2 tsp. nutmeg

  • 1/2 cup vinegar

  • 1/2 cup maple syrup (use real maple syrup)

  • 3/4 cup slivered almonds

  • 3 Tbsp. butter

  • 1/2 cup dried cranberries

  • 1/2 cup dried shallots

  • 1 Tbsp. plain bread crumbs

Directions

Preheat the oven to 500 degrees.

First get the cicken started, by seasoning it with some black papper and salt and after browning it in a pan, place in a tray and put the tray in the oven. Remove after 25-30 minutes.

While that is going on, combine the butter through the maple syrup and set aside.

Now combine the slivered almonds and butter in a sauce pan and cook until the almonds are fairly brown. Now add the cranberries and shallots and cook just a little more. Then add the bread crumbs and set aside.

When the chicken is ready, add a little of the chicken drippings to the maple and vinegar sauce and combine, heating just to warm it through.

To serve, you can either provide pieces of chicken with a coating of maple syrup and the almond topping or serve the whole chicken with the toppings included.
