I just tried a baked fish and it was really good that I wanted to share this here. Im great fan of fish especially deep fried, thawed, grilled, baked, batter fried- except raw (I guess that's all of the ways to eat a fish). I'm a fan of middle eastern style of fish grill/baking. If you get a chance to be to UAE(Dubai/Abu Dhabi/Fujairah/Sharjah/Ajman), Kuwait, Oman, Qatar, Bahrain etc. try this. You can go to the local fish market and buy the fish of your choice and then give it to the grill/bbq shops nearby. They weigh the fish and ask you to pay. Then come back after 45-60 mins take it to your home/park/corniche eat it with some bread/kubus with hummus/Tahini/Toum. So this was my try to recreate the closest tasting bake I had from Abu Dhabi.
Cooking time:45-60 mins.
Ingredients:
*Fish (Any)
*Lemon Juice - 2 medium sized
*Garlic - handful (bigger hands better)
*Olive Oil - as you wish
*Black Pepper.
*Salt
*Turmeric - If available
*Dried Red chillis/Kashmiri/Paprika- take a handful and soak in hot water for 5 mins.
*Tomato - one.
Procedure: 1.Preheat the Oven to 200 Deg.C (or equivalent whatever in your part of the world.) 2.Clean the fish, make cavities with knife for applying the filling. 3.Marinate with salt and turmeric along with Lemon juice and olive oil and keep aside. 4.Now grind Tomato, chillis/paprika, salt, garlics make a paste. 5.Apply the above derived paste to the fish nicely give it a good final massage. 6. On the baking dish put all veggies you can find like onions, bell peppers, beans whatever you like (imagination is your friend...my friend.) 7.Add a splash of Olive oil on to the veggies on baking dish. 8.Give a dash of oil to the fish as well. 9.Rest the fish over the veggies in its final resting plate..err.. place. Now put the dish in the oven give it a nice bake in around 150Deg.C. for 15 mins. See how the fish is cooking; based on that, continue for 15 more mins or so and turn over the fish on the other side and give it another 15 mins of cooking. Just put knife/fork/finger whatever you have to see if its flesh is cooked. If it's fine, add another dash of oil of filling paste and cook in high heat like 200Deg.C for 5 more mins to make the outer layer crispy enough. Once done, eat it without wasting a part and do make sure you dispose off the bones properly or it will poke someone's eyes some day.
