- Ingredients
- Chocolate Cupcakes
- 1 1/2 C Flour
- 1 tsp Baking Soda
- 3/4 C Cocoa
- 1 tsp Baking Powder
- 1/2 tsp Salt
- 1 3/4 C Sugar
- 1/2 C Vegetable Oil
- 2 Large Eggs
- 1 C Milk
- 1/2 C Boiling Water
- 12 Oreo's cut in half
- Oreo Cream Cheese Icing
- 4 oz Unsalted Butter
- 4 oz Margarine
- 8 oz Cream Cheese
- 2 tsp Vanilla
- 3 C Powdered Sugar
- 12 Oreo's (blended to a fine powder)
- Chocolate Oreo Filling
- 1 C Jell-O Chocolate Pudding
- 1/2 C Whipped Topping
- 4 Chopped Oreo's
- Instructions
- In a small bowl combine the flour, baking soda, cocoa, baking powder, and salt. Stir with a whisk. In a large bowl mix together sugar, vegetable oil, eggs, vanilla, and milk.
- Add the dry ingredients to the wet one half at a time and mix thoroughly.
- Once everything is mixed add the hot water. (You should bring the water to a boil and let sit for 30 seconds before adding to the batter)
- Be sure to stir as you pour the water into the batter.
- Preheat oven to 350°. Line cupcake pan with liners and fill with about ¼ cup of batter. Bake for 14-16 minutes. Cool completely.
- Oreo Cream Cheese Icing
- Blend 12 Oreo's in a blender or food processor into a fine powder.
- In a bowl cream together butter, margarine, cream cheese and vanilla, then add the powdered sugar one cup at a time.
- Lastly add the blended Oreo's.
- The icing does need to be refrigerated if you are not using right away. Be sure to re-whip for 2 to 3 minutes after refrigeration if saving for later.
- Chocolate Oreo Filling
- Chop 4 Oreo's with a knife. This does not need to be super fine just small chunks that will fit nicely into the middle of a cupcake.
- Mix the Jell-O chocolate pudding, whipped topping, and Oreo's together and it’s done. I used a cook and serve pudding mix but you can use instant pudding if you would like.
- Now let’s put these chocolate Oreo cupcakes together for an Oreo bite of awesomeness!!!
- Take the cupcake and create a hole in the center with either a knife or a cake corer.
- Fill the hole in the cupcake with your filling.
- You can use a small spoon but I took a plastic sandwich bag and put the filling inside and then cut one of the corners and then squeezed it into the cupcake.
- Make the hole about the size of a nickel because you do have decent sized chunks of Oreo's in the filling. Once all the cupcakes have the filling, ice the tops with the frosting. I used a large open star tip to frost mine with and a pastry bag then topped each cupcake with half of an Oreo.
