Sea scallops are a nice treat, and this fairly effortless scallops persillade is a sensational way to turn them into a winner.

Ingredients

  • Sea scallops (generally four or five per person)

  • Salt and pepper

  • 2 tablespoons olive oil

  • 5 tablespoons unsalted butter

  • 6 garlic cloves, minced

  • 4 tablespoons roughly chopped flat leaf parsley

Directions

Blot scallops dry with paper towels. Season with salt and pepper.

Put olive oil in a cast-iron pan over medium-high heat. When oil is hot, place scallops in pan in one layer. Allow scallops to brown on one side, 2 to 3 minutes, then turn and cook for 1 minute on other side. Remove scallops to a plate.

Turn down heat slightly. Add butter and swirl pan to melt. Add garlic and let it get just a little bit opf fragrance for 30 seconds.

Return scallops to pan and gently heat through.

Sprinkle with 3 tablespoons parsley and turn off heat.

Spoon butter sauce evenly over each serving. Serve immediately with lemon wedges.
