Romanian Sour Meatball Soup
Sour meatball soup is simple and classy, too. Best of all, it's easy and inexpensive to make, but produces the most amazing flavors.
Ingredients

6 cups beef stock

1 small thinly sliced onion

1/2 cup chopped parsley leaves

2 parsnips, peeled and cut into chunks

4-6 peeled carrots, cut into chunks

1 Tbsp. paprika
-
1 pound ground meat, equal parts beef, pork veal

1/2 cup plain breadcrumbs
-
1 small onion, minced
-
1/4 cup uncooked rice
-
2 Tbsp. water
-
Salt and pepper to taste
-
4 tablespoons tomato paste
-
Salt as needed
-
3-4 Tbsp. sauerkraut juice (or white vinegar)

Sour cream for garnish
Directions
In a Dutch oven or large deep saute pan with straight sides, bring beef stock to a simmer. Add sliced onion, parsley leaves, parsnip, carrots and paprika.
Meanwhile, make the meatballs by mixing together the ground meat, bread crumbs, finely chopped onion, rice, water and salt and pepper. Form into 1 1/2-inch meatballs and set aside.
When the vegetables in the saucepan become tender, bring to a boil and carefully drop in the meatballs, add the sauerkraut juice or vinegar. Reduce heat and simmer for 30-40 minutes. When the meatballs are well-cooked and floating, add the tomato paste and stir well.
Serve with a spoonful of sour cream as a garnish.
