TREATING GOAT MEAT WITH RESPECT - Carl Can Cook

a leg of goat....season it with salt and pepper...make slits to put in cloves of garlic...make a duxelle (finely chopped mushroom, peppers, onion...i blended it instead) and spread it over the goat....then wrap it in bacon and slow roast for 4 hours on 150 degrees (add white wine to baking tray)
