Banana and Brown Rice Breakfast Pudding

  • 2 cups cooked brown rice
  • 1 cup unsweetened almond milk
  • 1 cinnamon stick
  • 1/4 cup plus 2 Tbsp. sugar
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 3 medium bananas, peeled and sliced 1/2 inch thick on a diagonal
