I always make these to take to work when I want to feel healthy. Enjoy!
Ingredients
- 4 tortillas
- 1 cup shredded chicken
- 1 cup cooked quinoa
- 1/2 cu chopped tomato
- 1/2 cu chopped onion
- 1/2 cu shredded lettuce
- 1/2 cu julienne cucumber
- 1/2 avocado
- Chipotle ranch dressing
- taco seasoning
- Himalayan sea salt and fresh ground black pepper
Instructions
- Heat tortillas between 2 wet paper towel in microwave for 30 seconds.
- Add the chicken, quinoa, tomato, onion, lettuce, cucumber, and 3. avocado evenly between the 4 tortillas.
- Drizzle each with chipotle ranch dressing.
- Add salt, pepper, and taco seasoning to taste.
