[REQUEST] Fish and veg foil parcels that would be good served cold?

Hey guys, I make food in advance and take it to work either the same or the following day. I'll probably be having it with either pasta or microwaveable rice.

I know a lot of roasted vegetables lose their lustre after a few hours in the fridge, so does anyone else take fish and vegetables to work? If so, how do you prepare them?
