Request - low tomato bolognese/"meat sauce" for pasta

One of my go-to hits throughout my adult life has been pasta with meat sauce - pretty basic, saute onion/garlic/spice in olive oil, add tomato sauce/can of tomatoes, simmer. Saute ground beef in salt in cast iron, add to sauce, add herbs, simmer. Serve over pasta. YUM.

But, now I am living with my beloved who hates tomatoes! Well, "tomato stuff", he says, the only thing he likes, he says, is a raw tomato generously salted. Yet, somehow, I feel like I could make a version of meat sauce that even he would like. Call it a challenge?

Does any one have a good recipe for a low-tomato-content sauce like this?
