I meal prep on Sundays for the week. I make a lot of chicken and a lot of rice. My meals throughout the day are chicken with rice and vegetable (x2), chicken burrito, and chicken salad. I'm trying to figure out something easy I can do with the second chicken with rice and vegetable. My only idea so far is to just put the chicken (and maybe the rice too) into a pita and add some humus and tabbouleh to make a wrap.
Any suggestions? They don't necessarily have to use chicken and rice, but I'm already making that so that's easiest for me.
