Request: French herby sauce

Hi, Usually when you go to a typical French restaurant you get served a side dish of veggies (peas, carrots, green beans etc) and they are usually served in an awesome buttery/creamy herby sauce. I've tried to find the name of this in order to Google a recipe but I'm struggling to find recipes which look plausible. It's been so prevalent across the restaurants I've eaten at that I'm sure it must be a well known / classic standard recipe that I'm hoping I can find and easily replicate.

The sauce always is kind of creamy/buttery and is just substantial enough that it coats the veggies nicely.

The flavour is herby, but no one herb flavour jumps out at you, it's more of a blend. Maybe a touch of garlic too.

Would love to figure this out.

Cooked these Honey Teriyaki Ribs in the slow cooker, and still have about 4 cups of the sauce left over. Can anything be done with it?

Honey Teriyaki Rib recipe so y'all know what I'm working with. This is a modification of a recipe I saw on Facebook.

  • 8 oz honey

  • 12 oz Teriyaki

  • 1 bundle green onions, chopped

  • 8 oz crimini mushrooms, cleaned and chopped

  • 3 table spoons minced garlic

  • 2 1/2 to 3 lb rack of ribs.

  • Salt, Pepper, Paprika and Chili Powder to taste

Cut the rack of ribs in about half and pat dry and season to taste with the salt, pepper, paprika and chili powder. Put honey, teriyaki, garlic and onions into the slow cooker, on low. When the mix heats up enough to easily stir, add the ribs, making sure the meaty side is down, and the silverskin of the ribs is to the inside of the cooker. The meat should be against the wall. Spoon the sauce over the ribs, cover and cook on low for 6-8 hours. At the 4 hour mark add the mushrooms, rotate ribs if desired, and mix the sauce well. Re-cover, and allow to finish cooking. When the ribs are done, cut them into individual ribs, if desired, and spoon the sauce over them before serving.

The sauce is mostly the teriyaki and honey mix, with the garlic, onion and mushrooms simmered down within it.

Duck Egg Rolls

Egg rolls are easy to make and taste great with marinated duck and fresh
vegetables. Serve these up with some sweet chili sauce, sweet and sour
sauce and hot mustard.


Makes 10-12 Egg Rolls

INGREDIENTS

  • 4 duck breasts
  • 1 package Egg Roll Wraps
  • 1/2 cup chicken broth or water
  • 6 green onions finely chopped
  • 1 large carrot (diced or shaved using potato peeler)
  • 1 red bell pepper finely chopped
  • 2 cups finely shredded Napa cabbage
  • 1 cup bean sprouts
  • 8oz sliced water chestnuts
  • 8oz bamboo shoots
  • salt and pepper (optional)

Duck Marinade

  • 1 teaspoon rice wine vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon hoison sauce
  • 2 teaspoons fresh ginger
  • 2 garlic cloves sliced thin
  • fresh cilantro
  • 1 green onion finely chopped
  • red chili flakes (optional)

DIRECTIONS

  1. Marinade Duck breasts in a Ziploc bag for about an hour.

  2. In a bowl combine cabbage, carrot, onion, bean sprouts, bell pepper,
    bamboo shoots and water chestnuts.

  3. Remove duck from bag, chop and quickly fry in hot skillet. About 3-5
    minutes. Remove and set aside. Add ½ cup chicken broth to pan along with
    all vegetables and cook for about 5 minutes or until vegetables soften.
    (Note: cover pan with a lid to help steam vegetables.) Remove from heat
    and drain the liquid. Add duck meat to mixture.

  4. On a cutting board place egg roll with the corner pointed toward you.
    Place a few tablespoons of the mixture on egg roll and fold the corner up
    over the mixture. Fold left and right corners toward the center and continue
    to roll. With your finger, brush a bit of the water on the final corner to help
    seal the egg roll.

  5. Place egg rolls into heated oil and fry, turning occasionally, until golden
    brown. Remove from oil and drain on paper towels.

Dirty Rice with Lamb heart & kidneys

When I cook, I tend to eyeball my portions. Consider all spices "to taste". I didn't have all the ingredients I wanted, but this is how I actually made it. (See the end of the post for my planned changes next time I make it.)

Ingredients

  • 1/2 cup rice and 1 cup water
  • 1 lamb heart, trimmed of fat and cut into small pieces
  • 2 lamb kidneys, with membrane and fat removed, cut into small pieces
  • 1 orange pepper, chopped
  • 1 tomato, chopped
  • Generous pinches: salt, black pepper, oregano, thyme, garlic flakes
  • Smaller pinch: cayenne pepper.
  • 1 tsp oil for frying; about
  • 1 TB butter or margarine
  • Louisiana hot sauce to serve

Directions

  1. Cook rice and set aside.
  2. Over medium high heat, fry the orange pepper in oil for a few minutes until it's softened.
  3. Add tomatoes and spices, fry for another couple of minutes.
  4. Lower temp to medium, add butter/margarine.
  5. Add organ meats. Brown the pieces through.
  6. Stir in the rice. Cook for another minute or so to combine the rice with the spices and juices.
  7. Serve with Louisiana hot sauce.

Changes I'd make next time: add some onion, remove tomato, and maybe use green pepper instead of orange pepper.

Pear and arugula salad

Refreshing spring salad of pear and arugula. Light and energetic meal.

Ingredients

4 larger sweet pears 400 g arugula walnuts (two full hands) two tablespoons of freshly grated Parmesan cheese 1 lemon juice salt and ground black pepper extra virgin olive oil 

Directions

1. Peel the pears, and cut each pear into 4 parts. Wash the arugula and dry it. 2. Onto 4 plates place 4 slices of each pear. And on top of it washed arugula. 3. Pour it with quality olive oil and lemon juice. Add salt and ground black pepper. 4. On top of everything, add grated Parmesan cheese, and walnuts.

Prunes with Walnuts in Cream - Russian Dessert

Ingredients: Prunes without pips - 200 grams. Walnuts - 50 grams. Sugar - 250 grams. Sour cream (26%) - 400 grams. Chocolate. Vanillin.

Recipe: Prune the duck in warm boiled water for 30 minutes. Fill the prunes with walnuts. Beat up sour cream with sugar and vanilla. Put a prune on the bottom of the dessert. Pour prunes cream. Decorate the dessert with grated chocolate.

Pecan and Thyme Crusted Salmon

This roasted pecan crusted salmon is a simple recipe to cook any day of the
week. With a hint of maple and a nutty crunch in every bite.


Ingredients

  • 1 salmon, filleted
  • 2 cups pecans
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons fresh thyme
  • 2 tablespoons unsalted butter

Directions

  1. Heat oven to 350° degrees. Place pecans on a cookie sheet and roast for 10
    minutes, turning the nuts a few times to ensure even cooking.

  2. Remove from oven and let cool. When the pecans have cooled, place in a bag
    and gently pound with a rolling pin until chopped.

  3. Add thyme and parmesan cheese to bag and mix together.

  4. Pour pecan mix onto a plate. Take the fish fillet and firmly press flesh into the
    pecan mix to coat. Set aside when done.

  5. Heat a skillet over medium heat and melt butter. Place fish flesh side down
    and cook until browned.

  6. Remove and set fish on a baking sheet skin side down. Continue cooking fish
    in batches until done.

  7. Loosely cover salmon with foil and bake at 425° degrees for 15 minutes.

  8. Serve pecan and thyme crusted salmon with a side of quinoa salad or cooked rice.

COLORFUL PASTA SALAD WITH CHICKEN

Great chicken fillet strips pasta salad recipe.(Colorful)Type pasta in boiling salted water and cook 6-8 minutes. Then pour into a strainer, put off and drain well. Now pepper clean, wash and cut into fine strips.Peel the garlic and finely chop. Peel the onion and dice finely. Meat wash, Pat dry and cut into strips. Clean lettuce, wash and pull into bite-sized pieces. Herbal wash, Pat dry and pluck the leaves from the stems.

Coarsely chop the pistachios. Heat the oil in a frying pan, Brown meat is turning 4 minutes, season with salt, pepper and paprika. Remove from pan and keep warm. Paprika in the frying fat type and sauté briefly.

Garlic and onion can inflict, briefly with Sauté, Deglaze with the vinegar, boil up. Remove from the stove and season to taste with salt, pepper and sugar. Mix in herbs. Mix pasta, salad and warm vinaigrette with Bell Pepper strips. Arrange on plates, meat on it and serve sprinkled with pistachios.

Ingredients: - 600 gr (about 1 1/3 pound) chicken fillet - 200 ml (about ¾ cup) cream milk (30-35% fat) - 70 ml (about 1/3 cup) white dry wine or cognac - 100 gr (2½ ounces) blue cheese - 2-3 tablespoons wholegrain mustard - 1-2 tablespoons sunflower oil - Salt, ground black pepper to taste

Cumin-spiced Lamb Koftas

Serves: Two or more Preparation time: 30 minutes Cooking time: approximately 10 minutes

Ingredients 500g minced lamb *1 tablespoon oil *1 tablespoon ground cumin *2 tablespoon ground coriander *1 teaspoon turmeric *1 red onion, finely chopped *3 garlic cloves, crushed *1 lemon, juice and zest *handful of mint, parsley and coriander *salt and pepper

Method *1. Lightly toast the cumin, coriander and turmeric in a frying pan for 1-2 minutes. *2. Pop all the ingredients into a bowl and use your hands to mix the ingredients well. *3. Form oval meatballs and set aside in the fridge to rest for 15 minutes. *4. Heat the oil in a frying pan and gently fry for a few minutes on each side or until well-browned and cooked through.

Guacamole Autentico

Here's the real deal: a guacamole recipe so authentic, you can almost hear the
Mariachis singing.


  • 4 ripe, Fresh California Avocados, peeled and seeded
  • 1/2 tsp. ground cumin
  • 1 ripe, medium Roma tomato, seeded, diced
  • 1/2 cup minced sweet white onion
  • 2 serrano chilies, seeded and minced
  • 1/2 cup cilantro leaves, chopped
  • 4 Tbsp. fresh lime juice
  • As needed Hot pepper sauce
  • As needed Sea salt, to taste
  • As needed White pepper, to taste

Instructions

  1. Cut avocado in large chunks and mash coarsely in large bowl with a fork.
  2. Add remaining ingredients and blend gently; leaving some small chunks is fine.
  3. Taste and adjust seasoning with more pepper sauce, salt and pepper if desired

Korean Baby Back Ribs w/K POP Sauce (Korean Chili Sauce)

Baby Back Ribs w/K POP Sauce

Instructions:

  1. Preheat to 275F

  2. Dry rub ribs with the following in equal proportions (or 1 TBSP each): pepper, garlic salt, chili powder, onion powder

  3. Cover and let sit at room temperature for 30 min

  4. Generously brush on K POP Sauce, put on baking tray, and cover with foil

  5. Place in oven and bake for 90 minutes

  6. Let cool for 10 minutes before lathering with more K POP sauce

  7. Enjoy!!!

  • Cook the peppers a little
  • Grind the peppers
  • Add garlic, acid, and oil
  • Stew until it coagulates

Piedmontaises chicken wings (recipe + request for dipping sauce ideas)

Piémont is an Italian region (north-west). I honestly don't think the recipe really comes from that region but those chicken wing are out of this world!

Simply marinate 2 pounds of wings for ~24h in

  • 6 minced garlic cloves
  • ½ tbsp grated fresh ginger
  • ½ tbsp nutmeg
  • ½ tbsp thyme
  • ½ tbsp ground clove
  • 1 oz Gin
  • 4 oz soy sauce
  • juice from 1 lemon

Drain, pat dry and deep fry (preferably in peanut oil) until ready.

Now, does this inspire you a dipping sauce?

They're really good on their own but I want to step it up a notch...

  • 1kg blueberries
  • 12l water
  • 2kg sugar
  • 1 bag of limuntus (trisodium citrate - E331, bags are 10g)

Directions

  • Cook water and sugar for 20 minutes
  • Add squashed blueberries and cook for 30 minutes
  • Add limuntus
  • Pour into heated bottles

Ingredients

  • 3dl water
  • 1dl milk
  • 1 egg
  • 1 pinch of salt
  • 1 pinch of sugar
  • 16 soup spoons of flour
  • 2 soup spoons of oil (heat it and pour into the prepared mass)

Directions

  • Mix it together, adding the heated oil last.

  • Pour onto a pan, a ladle is very practical.

  • Be careful as these are not like the thick American ones, so they tend to rip much if they stick to the pan.

Homemade pizza

This pizza sustained us for a few years (of course we ate other things too) when Mum died and Dad couldn't cook anything (he didn't know to prepare food). I'm sharing it today with you all:

Ingredients (bar topping)

  • 500ml warm water
  • 100ml oil (we use sunflower oil)
  • 2 soup spoons sugar
  • 2 dessert spoons salt
  • 1kg flour
  • 2 soup spoons dry yeast

The topping that we use, in the order of placing

  • Ketchup
  • Oregano
  • Sesame seeds
  • Cheese
  • Ham (or what is it called, I don't eat it on my pizza)
  • Ketchup
  • Oregano
  • Sesame seeds

Directions

  • Mix everything up

  • Let it rise for an hour

  • Re-knead

  • Put topping

  • Bake in a preheated oven over 200°C.

Maple and Mustard Glazed Salmon

INGREDIENTS

  • Olive oil
  • 4 skin-on salmon fillets (6 to 8 ounces each)
  • Salt and ground black pepper
  • 1/4 cup maple syrup
  • 4 tablespoons (1/2 stick) butter, melted
  • 2 tablespoons Dijon mustard
  • 2 teaspoons apple cider vinegar
  • 1 teaspoon Worcestershire sauce

Steps:

  • Preheat oven to 450°F /230°C
  • Grease the tray with olive oil.
  • Generously sprinkle the salmon all over with salt and pepper.
  • In a small bowl whisk together the syrup, butter, mustard, vinegar and Worcestershire sauce to make the glaze. Brush the salmon tops generously with the glaze and place skin-side down on the tray.
  • Bake about 7-10 minutes.
  • Broil extra 2-3 min on 550°F/290°C (optional).
  • Enjoy this easy and effective dish!

Delicious Black Forest Style Tarte Flambée Recipe

Tarte flambée is an Alsatian-Mosellan and South German dish composed of bread dough rolled out very thinly in the shape of a rectangle (traditionally) or circle, which is covered with fromage blanc or crème fraîche, thinly sliced onions and lardons. It is one of the most famous specialties of the region. (Wikipedia)

We will show you how to make the "Black Forest Tarte Flambée”. You will love it!

Ingredients

  • 200 g flour
  • 2 tbsp olive oil
  • 125 ml water
  • 1 pinch salt
  • 200 g creme fraiche (or sour cream)
  • 200 g onions
  • 100 g bacon
  • 1/2 spring onion
  • A tiny bit 🙂 chive

Instructions

  1. Preheat the oven at max temperature.
  2. Mix flour, oil, water and salt to make a dough (ready at the moment it isnt sticky anymore). Roll it out as thin as possible.
  3. Spread the creme fraiche or sour creme on top of dough, then put the onions, spring onions and bacon on top of it. Season it with salt and pepper.
  4. Put it into the oven and bake it for about 10-13 minutes. The moment it looks crispy it's done! Now you only have to spread the chive over it and voilà your delicious black forest tarte flambee is ready!

Shrimps in Tomato Sauce with Feta, Peppers and two shots of Ouzo (Greek Garides Saganaki)

A fast but delicious Greek appetizer with shrimps in tomato sauce topped with Feta. It’s the famous Garides Saganaki.

Ingredients

  • 15-16 shrimps peeled.
  • 1 large onion chopped.
  • 1 green pepper chopped.
  • 2-3 large sweet and ripe tomatoes.
  • 1 tablespoon of tomato paste.
  • 2 garlic cloves.
  • A small bunch of flat-leaf parsley.
  • ½ cup of extra virgin olive oil.
  • A pinch of dried oregano.
  • ½ teaspoon of paprika.
  • 2 shots of Ouzo or another anise-based liqueur.
  • 100 gr (3.5 oz) of Feta cheese crumbled.
  • Salt and ground pepper.

Instructions

  • Add the tomatoes, garlic, parsley and tomato paste in a food processor and create a coarse paste.
  • Add the olive oil in a large frying pan on medium heat. Add the onion and green pepper and cook until they start softening. Add the tomato mixture from the processor, paprika, oregano, Ouzo and season with salt and pepper. Give it a good stir, lower the heat to low and let the sauce thickens (for about 10 minutes).
  • Preheat the oven at 190 degrees Celsius (375 F).
  • Add the shrimps in the pan, stir well and let them cook for a couple of minutes. Transfer the shrimps with the sauce to a medium tray, top it with the crumbled Feta and cook it in the oven for 5-10 minutes until the Feta starts getting brown.
  • Enjoy your Garides Saganaki with fresh bread and a glass of white wine or Ouzo.

Is this REALLY the best guacamole recipe, ever?

I follow the Cookie+Kate blog as I really like a lot of the tasty vegetarian recipes posted there. Of late, I've also got into Mexican food - though not too spicy! So I was wondering who else agrees with Kate that this is the best guacamole recipe out there? Be interesting to hear from aficionados of Mexican cuisine.

Learn how to make the best guacamole with this recipe! This genuine guacamole recipe turns out perfectly every time, and it's so easy to make. Recipe yields about 2 1/2 to 3 cups guacamole, depending on your avocados (divide or multiply as necessary).

Ingredients

  • 4 medium ripe avocados, halved and pitted
  • 1/2 cup finely chopped white onion (about 1/2 small onion)
  • 1/4 cup finely chopped fresh cilantro
  • 1 small jalapeño, seeds and ribs removed, finely chopped
  • 3 tablespoons lime juice (from about 1 1/2 limes), or more if needed
  • 1/4 teaspoon ground coriander
  • 1 teaspoon kosher salt, more to taste

Instructions

  • Using a spoon, scoop the flesh of the avocados into a low serving bowl, discarding any bruised, browned areas. Using a pastry cutter, potato masher, or fork, mash up the avocado until it reaches your desired texture (I like my guacamole to have some texture, so I stop mashing once there are just small chunks remaining).
  • Promptly add the onion, cilantro, jalapeño, lime juice, coriander, and salt. Stir to combine. Taste and add additional salt (I often add up to 1/2 teaspoon more), until the flavors really sing. If it needs more zip, add a little more lime juice (or, if it tastes too limey already, don't worry—it will mellow out after a brief rest).
  • To store leftovers, transfer the guacamole to a suitably sized, more vertical container to reduce the surface area available for oxidizing (browning). Place a generous hunk or halve of onion on top (see photo) and cover the container with plastic wrap. Leftovers will keep well, refrigerated, for about 3 days. Just remove the onion before serving. If the top turns light brown, just scoop off the browned bits and you should find bright green guacamole underneath.

Change it up": This guacamole is perfect as is, but if tomatoes are in season, try adding in chopped ripe (seriously red!) seeded tomatoes. If you want to get crazy, try garnishing your guac with crumbled cotijah or feta cheese, chopped chipotle peppers in adobo sauce or sun-dried tomatoes, and/or toasted slivered almonds or pepitas.

Double Chocolate Peppermint Cake

This is a subtle peppermint flavour double layered chocolate cake. The second chocolate delight comes from the white chocolate whipped cream icing that separates the layers and tops the cake. Each icing layer is sprinkled with both crushed candy cane and chocolate shavings. This is a relatively simple to make cake that doesn’t need a perfectionists touch to finish off the cake. Although there are two chocolate ingredients, the cake is not super sweet.

Ingredients:
Cake
• 1/2 cup Vegetable Oil
• 2 cups White Sugar
• 1 tsp Vanilla Extract
• 1 tsp Peppermint Essence
• 1 cup Milk
• 2 Eggs
• 1/2 tsp Salt
• 2 tsp Bicarb Soda
• 1 tsp Baking Powder
• 1 cup Coffee Hot weak Coffee
• 3/4 cup cocoa powder
• 1 3/4 cup Plain Flour
White Chocolate Icing
• 1 cup Thickened Cream
• 200 g White Chocolate chopped
• 1 tbsp Gelatin
• 1/4 cup water
• 1/4 cup Icing Sugar
Topping
• Candy Canes crushed
• Chocolate Shavings

Instructions:
Cake
1. Grease and line with baking paper two 20cm (8") round springform baking tins.
2. Preheat oven to 350°C (fan forced).
3. In a large bowl, add vegetable oil, sugar, vanilla extract, peppermint essence, milk and eggs. Using a wooden spoon, mix until combined.
4. Add salt, bicarb soda & baking powder and continue mixing with spoon until combined.
5. Add hot coffee and stir until mixed through.
6. Add cocoa powder & flour and stir until combined.
7. Pour mixture evenly into the two baking tins, place into the oven and cook for about 35 minutes, or until a skewer inserted into the centre of the cake comes out clean.
8. Remove from oven and cool on baking tins for about 10 minutes before turning out onto wire racks to cool completely.
White Chocolate Icing
1. In a microwave safe bowl, add white chocolate and thickened cream and heat until chocolate has melted and smooth. Set microwave strength to about 50% and heat for about 40 seconds at a time. Remove from microwave and stir after each interval.
2. Place in refrigerator to cool completely (about 1 hour).
3. In a small bowl sprinkle gelatin in 1/4 cup water. Let sit for about 1 minute.
4. Place bowl in microwave and heat for 20 seconds, remove and stir to ensure the gelatin is fully dissolved.
5. Remove white chocolate mixture from the refrigerator and using an electric mixer, beat the white chocolate until soft peaks form. This will take a few minutes.
6. Add room temperature gelatin & icing sugar and continue beating until stiff peaks form.
Cake Assembly
1. Place one cake on a plate and layer the top with about 1/2 the white chocolate icing mixture.
2. Sprinkle the top with crushed candy cane and chocolate shavings.
3. Place the second cake on top and repeat the process. Again finishing with crushed candy cane and chocolate shavings.
4. Chill and store in refrigerator
