Home made Tostones (refried green plantain)

INGREDIENTS

AS many green plantains as you want to make

For every 2 plantain, 1 cup of water with 1 tbsp minced garlic

Oil to fry (your choice)

salt

INSTRUCTIONS

Cut plantain into 1" slices

Heat oil until it's hot enough to bounce off a drop of water

fry plantain in batches 2 mins each side on high heat, with the oil hot

Remove from oil after frying into a bowl with paper towels with excess oil

Mash each 1" plantain with something to make them 1/4" or thinner

Dip each mashed plantain in the garlic water

Add more oil and bring back up heat

Add mashed plantain in batches, frying 2 mins each side

Remove to bowl with paper towels and add salt to taste

Serve immediately as a side to a meal or as an appetiser to dip. Good with many different dips: salsas, guacamole, other.... I prefer them to potatoes.
