Keeping additions in tuna/chicken salad fresh...ideas?

In the summer I make a great deal of chicken salad, tuna salad and easy sandwich items to have on hand. I like to add avocado, dried cranberries, apple, or walnuts and a bunch of additions. If I have it in the fridge two days, the additions become icky. How do people keep it fresh? Another example would be something like corn salad. I love to make a good amount but it also is unappetizing after the first night but I know people do have it in their fridge. Are there any secrets for this?thank you. Cheers!
