THE BEST SALTED CARAMEL SAUCE

250ml thickened cream 50g unsalted butter 330g white sugar 125ml water 2 tbs glucose syrup (or corn syrup) 1 teaspoon sea salt flakes

Place the sugar,glucose,and water in a saucepan on a medium heat and stir them a bit. Brush the sides of the saucepan with a heat resistant silicone brush dipped in water. In the meantime, heat the cream a bit so it's warm otherwise it will bubble up.When your mixture gets to a medium caramel color turn off the heat,add your butter,salt,and warm cream and whisk them. This sauce is extremely delicious and keeps well for at least 3 months.
